Summer is undisputedly a time for salads and light dinners. As you know, at La Newyorkina we are very fond of making huge salads with tasty ingredients and a spoonful of granola as a topping. But today we're not going to talk about salads, today we're going to give you another idea for your summer dinners: toast. We love toast, whether for breakfast, lunch or dinner, and since we added a little granola to our recipes, it has become one of our culinary vices par excellence. Today, we are mixing three of our favourite foods on toast: bread, obviously; avocado, I have already told you about all the benefits of this very fashionable fruit and, of course, granola. We can use any of our granola recipes (original granola, organic granola with apple and ginger or organic granola with lemon and coconut). We like pink granola best for breakfasts or snacks with sweet flavours. If you are as big a fan of bread as I am, you probably like to try any kind of bread and enjoy those traditional bakeries where the smell of bread is the smell of real bread. The choice of bread is crucial, it is the base of our toast and a bad bread can spoil the final result. Personally, I'm a sucker for bread with seeds. The best option is to use breads made with wholemeal, whole grain flours and seeds. If you have the possibility to choose homemade or organic, all the better. The best thing about it? Well, it's easy to make and you don't have to go crazy looking for the ingredients: Ingredients for 1 avocado toast with granola 1 slice of bread 1 small avocado Himalayan pink salt 1 tablespoon of La Newyorkina granola (you can buy it in our shop or look for your nearest shop) Extra virgin olive oil Okay, now just cut the avocado however you like it, put it in a bowl, add a pinch of Himalayan pink salt and a drizzle of olive oil. Toast a slice of bread and put the avocado on top, then top it off with a spoonful of your favourite La Newyorkina handmade granola and enjoy! As you can see, it's a perfect option for a quick dinner, you can combine it with a salad, or for breakfast with a delicious coffee.
